Work Detail
The Subject Of The Contract Is The Provision Of Services Consisting In Cooking And Serving Varied Meals For Students / Charges Of The Special School And Educational Center In Damnica For 5 Days A Week (On School Days) In The Period From 04.09. 2023 Until June 21, 2024. The Contractor Will Prepare And Serve 5 Meals A Day For The Pupils Of The Dormitory Center Actually Staying On A Given Day, I.E. Breakfast, Ii - Breakfast, Lunch, Afternoon Tea, Dinner. The Number Of Lunches Will Be Increased By The Number Of Students Coming/Commuting To School. Meals Will Be Served At Times Agreed With The Ordering Party On The Basis Of The Lists Of Charges Of The Special School And Education Centre, Which The Ordering Party Will Provide To The Contractor. The Average Number Of People Using All-Day Meals A Day - An Average Of 40 Pupils Staying In The Dormitory And An Average Of 25 Lunches A Day For Children Attending/Commuting, Excluding ; Days Off From School, I.E. Saturdays And Sundays, Winter Holidays, Holiday Breaks And Excused Absences Of Children, E.G. Illness, About Which The Ordering Party Will Be Informed Each Time. The Ordering Party Will Be Charged With The Costs (Feed For The Boiler And The Cost Of Preparing Meals) Only For The Meals Actually Served To The Pupils Staying In The Dormitory Of The Center And The Costs Of Preparing Dinner For Children Arriving/Commuting. The Estimated Number Of All-Day Meals Covered By The Order Is 37,200 Meals, I.E. 186 Person-Days - 5 Meals A Day For 40 People, And Lunches For Children Arriving/Commuting - 4,650 Lunches, I.E. 186 Person-Days - 1 Meal For 25 People In The Period From 04/09/2023 To 21/06. 2024. The Contractor Will Be Obliged To Use Only Foodstuffs That Meet The Requirements Set Out In The Regulation Of The Minister Of Health Of July 26, 2016. On The Groups Of Foodstuffs Intended For Sale To Children And Youth In Units Of The Education System And The Requirements To Be Met By Foodstuffs Used As Part Of Mass Catering For Children And Youth In These Units (Journal Of Laws Of August 1, 2016, Item 1154) . In Addition, The Service Covered By The Subject Of The Contract Should Be Performed In Accordance With The Provisions Of The Act Of March 2, 2020 On Special Solutions Related To The Prevention, Prevention And Combating Of Covid-19, Other Infectious Diseases And Crisis Situations Caused By Them (Journal Of Laws Of 2020, Item 1842) And Recommendations On The Operation Of Day Care Centers Issued By The Ministry Of Family, Labor And Social Policy. Meals Should Cover The 24-Hour Demand For Calories And Basic Nutrients. The Caloric Value Of The Meal Should Take Into Account The Age Of The Students. The Contractor Will Provide Meals Prepared On An Ongoing Basis, Only From First-Quality And Fresh Products (Especially Vegetables And Fruits), In Accordance With The Haccp Rules. The Contractor Will Not Use Additional Substitute Preparations And Preservatives, Thickeners, Colored Or Artificially Flavored, In Particular: Instant Preparations And Low-Quality Ready-Made Products, E.G. Frozen Dumplings, Meatballs, Stuffed Cabbage, Etc. The Contractor Shall Use Only Fresh Butter Or Margarine (If Required By The Diet) And Cheese (And Not Cheese-Like Products). In Addition, It Will Provide High-Quality Cold Cuts And Mechanically Unbonesed Meat. The Contractor Shall Purchase The Products Needed To Prepare Meals On His Own And At His Own Expense. The Ordering Party Requires Taking Into Account Individual Elimination Diets For Allergic Children, With Food Intolerance, Including: Children With Diabetes, Children With Gluten And Lactose Intolerance. A Detailed List Of Allowances Will Be Provided By The Contracting Authority To The Contractor Prior To The Execution Of The Contract. The List Will Be Modified Depending On The Current Needs Of The Ordering Party. Meals Must Be Presented Aesthetically. The Ordering Party Reserves The Right To: 1. Control The Products To Be Processed, 2. Access To The Quantitative Records Of Meals Served, Kept By The Contractor, 3. Access To Documents Identifying The Contractors Suppliers,4. Access To The Post-Inspection Protocol After Each Sanitary Inspection Of The Kitchen. Before Being Released From The Kitchen, The Prepared Meals Will Be Checked In Terms Of Quality And Quantity By Persons Authorized By The Contractor. The Inspection Will Include: - Qualitative Assessment Of The Preparation And Serving Of Meals, - The Possibility Of Organoleptic Assessment By Tasting, - Checking The Compliance Of The Meals Served With The Menu, - Checking The Weight And Temperature Of The Meal. Will Be Obliged To Prepare Menus For A Period Of 5 Days, Containing, Among Others, Data On The Calorific Value Of The Meal, Composition, Grammage. The Menu Should Be Arranged In Accordance With The Regulation Of The Minister Of Health Of July 26, 2016. The Menus Should Be Diversified In Terms Of The Selection Of Products And Culinary Techniques, Take Into Account Seasonality And Include All Ordered Diets. The Contractors Obligations (At The Contractors Cost) Also Include: 1. Providing Traditional Meals During Christmas And Easter As A Holiday Treat As Part Of The Board, 2. Providing A Meal In The Form Of A Barbecue On The Occasion Of Childrens Day, 3. Washing And Steaming The Whole Set Of Dishes And Cutlery, 4. Own Collection And Management Of Food Waste, In Accordance With Applicable Regulations. Persons Employed In The Preparation And Serving Of Meals Must Have An Appropriate Certificate Documenting The Admission Of These Persons To Work In Collective Catering. The Ordering Party Expects A List Of Personnel Along With A Statement On Having Current Sanitary And Epidemiological Tests. The Contractor Will Take Care Of The Aesthetic Appearance Of The Employed Staff, Cleanliness And Safe Use Of Catering Equipment.
